Summary: The Quality Assurance Officer is responsible for ensuring the quality and safety of raw materials, production processes, and finished products within the commissary. The role conducts quality inspections and process monitoring, ensures compliance with food

safety, GMP, HACCP, sanitation, and company standards, and identifies and addresses quality and process deviations.

 

The QA Officer also maintains quality documentation, conducts internal audits, supports corrective actions, and works closely with Production and other departments to maintain consistent product quality and continuously improve commissary operations.


Key Responsibilities:

  • Monitor compliance with GMP, HACCP, sanitation, hygiene, and food handling procedures throughout the commissary.
  • Conduct regular inspections of production areas, equipment, storage areas, and employee hygiene practices.
  • Ensure proper implementation of cleaning and sanitation procedures.
  • Inspect incoming raw materials, packaging materials, and supplies to ensure they meet approved quality and specification standards.
  • Check product condition, quantity, expiration dates, temperature, packaging integrity, and other required parameters.
  • Monitor production activities to ensure compliance with approved recipes, procedures, specifications, and food safety standards.
  • Conduct regular in-process quality checks throughout preparation, cooking, cooling, portioning, packing, and other production stages.
  • Inspect finished products for quality, consistency, portioning, appearance, taste, temperature, packaging, and labeling, based on established specifications.
  • Ensure products released for distribution meet the required quality and food safety standards.
  • Hold, reject, or recommend disposition of products that do not meet specifications.
  • Conduct regular internal quality, food safety, sanitation, and GMP audits.
  • Assist in regulatory, customer, supplier, and third-party audits.
  • Ensure compliance with applicable food safety and regulatory requirements.
  • Maintain accurate QA records, inspection results, audit reports, product monitoring records, and other food safety documentation.
  • Prepare regular QA reports and communicate significant quality issues to management.
  • Ensure proper documentation and traceability for audit and regulatory purposes.


Qualifications:

  • Bachelor’s degree in Food Technology, Nutrition, Chemistry, or related field
  • At least 2 years of experience in Quality Assurance/Quality Control, food manufacturing, commissary, central kitchen, or food production
  • Knowledge of GMP, HACCP, food safety, sanitation, and quality control procedures.
  • Ability to conduct inspections, audits, and quality checks to ensure compliance with company standards
  • Familiarity with food safety regulations and sanitation standards
  • Proficient in preparing reports, maintaining documentation, and monitoring corrective actions
  • Ability to work independently and collaboratively in a fast-paced environment
  • Strong attention to detail and analytical skills
  • Good communication and reporting skills
  • Ability to work in a fast-paced production environment
