- Oversee the ice-making machinery, ensuring its proper functionality and adjusting parameters such as ammonia levels, salinity, and water quality.
- Adhere to the production schedule, monitoring harvest times and temperatures to ensure adherence to the production template.
- Perform regular inspections, lubrication, and cleaning of equipment, including freezing tanks and related machinery.
- Conduct minor repairs and coordinate with the maintenance group for larger issues, ensuring timely and effective repairs.
- Implement and maintain company policies on safety and sanitation, including good manufacturing practices (GMP) and standard operating procedures (SOP).
- Conduct inventories of consumables and parts, reporting needs for refilling ammonia or reinforcing salt to the production head.
- Document and record operational data, monitoring parameters and filling out log forms for submission.
- May supervise brine men and storage men, ensuring adherence to duties and operational standards.
